So I had about 85 Gms of cream cheese left in my cupboard and I needed ideas to use it productively. Cheesecake was one option as I had not tried it till now but it needs a good 200 Gms cream cheese minimum for a good sized cheesecake which can satisfy your appetite. Another option was to make cupcakes and top them with chocolaty cream cheese icing but I had already used half of my cream cheese bar last week in the pink velvet cake piping. It was the Valentine’s Day yesterday so you feel everything around you is perfectly red and mushy. Everyone is buying gifts and roses especially red ones and what not. It’s also a high sales time for all the bakeries out there with people lining up to buy cakes to cut them with their loved ones as a gesture of sharing love. But again it’s a perfect opportunity for the budding baker’s like us to surprise the special people in our life. I generally do not get late in baking something but I do get late in writing up the post for it. So this one post is something that has been pending since last Monday. In between my first MAC ATTACK took place and I have become one happy girl who can bake macarons . I think January has ended on a pretty good note. Its nearly 1 am in the night (India) and I am trying hard to finish the blog entry for my first Mac-Attack as I do not want to wait one more month . Purple carrot pudding

The other day while shopping for daily vegetables, I came across a weird vegetable or root I should say. It looked like carrot in shape and turnip in colour.Somewhat black and somewhat purple; it lay there in the end of the stacks, almost untouched. Most of us often feel hungry after coming back from office at around 7 pm and I am not different either. But at the same time I feel lazy like everyone else (though I love cooking!!!). Delhi is experiencing one of the worst winters this year. You can actually feel the cold just by looking outside at the dense white fog. Such kind of weather calls for a hot sumptuous dessert. Usually you would relate spinach with soups or saags (curried Indian main course dish). Or in general you would relate it to something healthy and savoury. So when I ate a spinach sweet in the office I was surprised at how spinach could turn out into such a beautiful sweet dish retaining its original flavour as well. Vanilla is one of the most expensive spices in the world. Luckily we live in a country which is one of the largest producers of vanilla. But unfortunately vanilla doesn’t find any place in the spice rack of normal Indian kitchen so most of the produce is exported. As it is produced in the southern states of India, it’s easier to buy vanilla there. But it’s very difficult to find vanilla in the northern states. Even if you find it, it’s expensive.
